Delicious Carrot and Parsnip Farmhouse Soup

Try our delicious Farmhouse soup, made from fresh local vegetables from Northern Ireland. All the ingredients can be purchased from Ballykenver Farmshop & Kitchen in Armoy – run by Farm Foodie Amanda Hanna.

Quick and easy to make and packed full of nutritious ingredients, you’ll feel full and bursting with energy after a bowl of this hearty soup.

Recipe

Ingredients:

  • 25g butter
  • 450g carrots, peeled and chopped
  • 1 small onion peeled and chopped
  • 1 parsnip peeled and chopped
  • 700ml vegetable stock
  • 3 tablespoons of fresh chopped parsley (optional)
  • Black pepper

Method:

Melt butter in a large saucepan.

Add the chopped carrots, onions and parsnips.

Cook for 2-3 minutes until softened.

Add the vegetable stock. Cover and simmer gently for approximately 35 minutes.

Remove, cook and blend. Stir in the freshly chopped parsley and serve.

If you would like more soup just double up the quantity.
